Saltimbocca alla romana

Serves 4
veal cutlets with sage , roman style
8  thin veal cutlets (about 1 pound )
8 thin slices of italian prosciutto ham
8 fully grown sage leaves
3 to 4 tablespoons of butter
1/2 cup of dry white wine
salt and freshly ground pepper
tenderize the veal with meat tenderizer
place 1 leaf of sage and prosciutto spear them together with toothpick
melt 2 tablespoons of butter in large frying pan ,
add the cutlets and pan fry for 2 to 3 min each side , lightly season with salt and pepper, remove from pan keep warm ,
dilute the pan juices with 1/2 cup of the dry white wine  at high temp and whisk together, quickly add the veal back to frying pan
and heat again ,
ready to serve mmmmmmmmmmmmmmmmmmmm
Jump into the mouth , the literal translation !!

best served with fresh white bread , and fresh picked peas OR MY POLENTA LASANGA

Simple and fast pasta and sauce ~

This sauce is my  ( QUICKIE ) , Yes that's what i call it , quick and damn good !!

Large can plum tomatoes
half a bunch fresh Italian parsley
3 cloves minced garlic
1 hot chili pepper ( optional )
2 tablespoons tomato paste
6 tablespoons olive oil
1 tablespoon butter
half cup Romano cheese ( or your favorite Italian cheese )

Heat large deep frying pan , add 4 tablespoons olive oil , add minced garlic,simmer for a few min till garlic is golden , add Italian parsley , add  chili pepper,  1 tablespoon of butter, let all this simmer on a low heat for about 5 to 7 min , this gets the flavour in the oil for you .

Add the full can of plumb tomatoes to the pan, stir them in real good and simmer covered for 30 min.
add 1 more tablespoon of olive oil ,
now add the cheese of choice , keep stirring until the cheese melts in ,dont let it get all clumpy

broiled potatoes ,this one is for you momma GRAD :}

Dice up 6 to 8 large potatoes
add them into a deep baking dish
heat oven to 400
coat them generously with olive oil ,in the baking dish
add 1 big clove minced garlic , sprinkle on some Montreal steak spice ,and dried rosemary, mix them well ,till you see most of the potatoes have spices stuck to them
put the baking dish in for about 1/2 hour , toss them and add a nice chunk of butter ,back in they go till you see them crisping up

there done , ready to eat  :}

spahetti carbonara,with eggs and bacon

Serves 4 to 6
6 strips of smoked bacon
1 and a half cups of parmesan cheese
3 tablespoons whipping cream
3 eggs
1 pound of  pasta
2 tablespoons of olive oil
2 cloves of garlic
salt and pepper

Dice the bacon up , put into large frying pan , add 2 tablespoons of olive oil
In a lage pot boil pasta in salted water for 8 to 10 min
Beat the eggs,whipping cream salt and pepper together , until it looks foamy, and add 2/3 cup of cheese

remove the crispy bacon you fried, keeping them warm , mince the garlic and astute in the bacon fat till golden brown

drain pasta ,add it to the frying pan ,toss in the bacon bacon fat in the pan coating the pasta well in the bacon fat , remove pan from the heat , pour in the egg mix into the pasta , add the rest of the cream , keep  stirring , do not let it solidify in the pan , the sauce should remain creamy .

sprinkle with the crispy bacon with a lot og freely ground pepper and grated cheese

your all done ,enjoy the feast to the taste buds ,a very quick and tasty dish !!

add 1 more tablespoon of olive oil ,
now add the cheese of choice , and 2 tablespoons of tomato paste,  keep stirring until the cheese melts in , it will clump up if you don't stir often enough .

Cook what ever type of past you want for this Delicious  and very quick tasty sauce .
Now any good wop knows to take some of the pasta sauce to mix with the freshly cooked and drained noodles ,stir it into the noodles to coat them with the sauce ,then pour some excess over it all when it is on the plate,now the taste is on every little noodle :}

Just to let you know the cheese you add plays a huge roll in the taste of the sauce , choose wisely,i like the Romano , its a light one ,but still enough bite to matter !
You can also use this as a Strong base for most of you sauces ,add meat to it ,add veggies to it, and now becomes a real filling meal but more time to cook ................
Enjoy  it`s worth the effort ,very very tasty sauce .

My first recipe

As most of my friends know i am italian descent born in canada and very proud !!.
So most of my dishes are italian cuisine , and all the ingredients are fresh, no boxed crap allowed here , only if you knew what was in that crap you would not even feed it to your dog !

Braised veal with white wine and green olives
This portion size feeds 4 people
1and a half pounds lean veal (sirloin tip or loin )
3 ounces or quarter cup small pitted green olives
6 sage leaves
quarter cup dry white wine
4 tablespoons olive oil ( extra virgin )
2 healthy tablespoons of butter , i like to addd more for my taste
1 bay leaf
salt and freshly ground pepper
This all has to be fresh as you can find it mostly in you local stores or markets !
Cube the veal.Heat olive oil in a large frying pan, add butter, allowing it to melt, Add the sage leaves and bay leaves, until it starts smelling real damn good , on a low heat.
raise the heat, gradually add veal, and brown, stirring it constantly
Season with salt and pepper,moisten with white wine, and simmer for 10 minutes .
Add the pitted green olives and heat them, again season with salt and pepper to your taste !

I served this with a side of roasted seasoned potatoes ,i can give the recipe for those also just ask ,there is a trick to them too to get them real tasty ........
Serve this dish with a full bodied white wine ,and enjoy the taste that the wine adds to the dish !

Very first blog

Here goes nothing , this is my firs portion of yet is to come, on the food i prepare, the ingredients i use,  where i find them , and restaurants i eat at in my city, oh yes and i cant forget the wine we love to drink ! .
How this idea came about ?, as you all know i love too cook, and show off on face book the pictures i`m very proud of what i have created,  with fresh ingredients right here in my own back yard, yes the lady in my life encourages me to become a better man and person every day and we all know how challenging this can be at times, but it all happens quite easily with things you love to do , hobbies or just plain simple hard work !
I will show you as much as i can , how simple and quick the food i cook really is ,it`s not rocket science, just take a recipe you want to try, follow it, and tweak it to your taste !!.
 I hope what i have to offer will help my friends enjoy the art of cooking and enjoying the food you love !
